Les Marmitons New Jersey: Valentine a la Sous Vide

This year,  I was privileged to be invited to Le Marmitons New Jersey Valentine’s Day event, which was held on Saturday, February 12th.

Now, I realize that Valentine’s Day is February 14th, a Monday in 2011. But this minor technicality aside, and throwing chronographical details to the wind, the Jersey Les Marmitons cooked up their usual storm, this time in appreciation for their significant others who are usually left out of the events because the organization is strictly a men’s cooking club.

Picnic a Les Marmitons

Chef Christine Nunn of Picnic, The Restaurant (opening June 2010), was the special guest chef at the New Jersey chapter of Les Marmitons Spring event.

We feel a bit of a Yenta’s pride in this as another OTB friend Eric Eisenbud, and former President of the chapter, was the event organizer, responsible for procuring the guest chef and provisions. For those who don’t know, Les Marmitons is a gastronomic and social club of gentlemen who share a common interest in fine food, wine and the culinary arts.

Hangin’ with Les Marmitons de Jersee Nouveau

Dinner with Les Marmitons, Oct 9 2009 by you.

I recently had the opportunity to be the invited guest of the president of the New Jersey chapter of Les Marmitons, an international social cooking club for male epicureans that has been in existence in North America for 32 years.

The October 12th dinner, which was held at the Don Bosco Knights of Columbus Hall in Port Reading, was a Beer-themed event in the spirit of Ocktoberfest, but with an Italian twist. The chef who prepared the menu for the evening was the young and energetic Dan Richer, proprietor of Arturo’s Osteria in Maplewood. Dan is something of a beer fanatic and was the perfect choice to select the dishes for the Marmitons to prepare.

That’s a Lot of Crawfish, Eric.

My friend Eric Eisenbud is indeed an amazing character. His hunger for all things culinary rivals mine, but his body keeps shrinking. So far, he’s lost 50 pounds over the last several months, and he looks great. But that doesn’t mean the man still doesn’t know how to overdo it like a professional.

Eric, who is former President of New Jersey Les Marmitons, has held a Louisiana Crawfish Boil at his house for the last few years and this year I was one of the lucky friends to be invited. To say that the eating was massive is an understatement. I keep telling myself “not to worry, they’re mostly protein“, but it only goes so far.

Latin Extravaganza at the Connors

Parties sometimes come together without much of a reason. Our friend Sandi Levitsky-Connor, who we’ve profiled recently with her Jedi-master empanada making skills, decided to have a mega cooking and eating session at her house and invite a couple of friends over. As it was also my wife’s birthday that week, it also became an occasion for eating cake, which needs no excuses at all.

Sandi, who is a fantastic cook, and loves all sorts of cuisines, decided to make this party Latin themed. Dishes from Puerto Rico, Cuba, Trinidad, Peru, Honduras and Spain were prepared, with the assistance of our friends Eric Eisenbud and Efrain Raices from NJ Les Marmitons.

Green plantains. When you see this on a table, you know what’s coming.

After meeting the young and food passionate Dan Richer at the recent New Jersey Les Marmitons beer dinner, I knew that this was a guy who’s restaurant I needed to go eat at.

Richer, who has no formal culinary training but who has a passion for cooking Italian cuisine, purchased Arturo’s from the original owners (which opened in 1991 as a wood fired pizzeria) in 2006. Richer has staged at many restaurants in Italy, frequently travels to Europe and has taken what he has learned and brought it back to his small Maplewood restaurant, which has a focus on pasta, pizza, and locally sourced ingredients. While Arturo’s retains a basic menu of pasta dishes, salads, small plates and artisan pizzas, Richer has gained quite a following from his regulars and has introduced tasting menus where everything is completely off-menu and seasonal.
