Sick of Zucchini Bread already? Here’s something else you can do with our friend Monsieur Courgette.
Zucchini Pancakes (or Fritters)
2 cups grated zucchini
2 eggs
1/2 tsp salt
Ground Pepper to taste
1/2 oz grated cheese (Parmesan, Romano, Cheddar, Swiss optional)
Bacon, cooked and crumbled (optional)
1/2 cup cornmeal
1/2-1 cup self-rising flour (or add baking soda/powder to regular flour)

Grate your Zucchini.

Mix all the ingredients except for flour. Then mix in flour. To have a thicker consistency for fritters, add more flour.

Scoop with ice cream disher

For pancakes, cook in a cast iron pan (or non-stick) or a griddle.

Enjoy.

These look lovely. Just curious though - do you think they could just be baked in the oven? I’d rather do that than fry if I can. Also, do you usually eat them as is or with a sauce or syrup on them? Your pictures are making me hungry!

How can you ever get sick of zucchini bread? That said, interesting new use for all those zucchini…I’m with teeni on one thing, though, do you use any kind of sauce or syrup?

A light tomato sauce might work with this, but they really don’t need anything. Maybe a fresh salsa of chopped up tomato and basil.

If you use the cheese and/or bacon, they really don’t need a sauce or garnish. Actually, they’re quite savory, and make a good side dish as well as breakfast or lunch. Corn fritters (coming soon), on the other hand, are great with a little maple syrup.
